Maybe the greatest edible mushroom, at least in fall, appears to be plentiful this autumn in its own habitat. More formally known as hen of the woods but so as not to confuse gatherers most now use a Japanese name, Maitake (my-tak-ee) which translates to “dancing mushroom.”
